The Ultimate Banana Bread Recipe

What you need:

  • 2 cups of flour (standard OR self raising)

  • 2 tsp baking soda

  • Pinch of salt

  • 1 tsp cinnamon

  • ½ tsp of all spice (optional)

  • 1 cup coconut oil OR butter OR Olivani spread

  • 1 cup chopped or mashed banana

  • 2 eggs

  • Cup of sultanas OR Raisins OR other dried fruit

  • Sliced half banana chopped in two for decoration

  • Oil OR butter OR baking paper for greasing or lining the loaf tin

  • Loaf tin

    NOTE: With the sultanas, banana and cinnamon this cake loaf doesn’t need sugar. But if you want an extra dose of sweetness you can add half a cup of brown sugar.


What to do:

  1. Preheat the oven to 160-170°C

  2. Combine flour, salt, baking soda, cinnamon and all spice (or your alternatives) in a bowl.

  3. In a separate bowl beat together the oil and eggs. Stir in the chopped or mashed banana and dried fruit.

  4. Gradually mix the dry ingredients into the wet ingredients with a wooden spoon until combined.

  5. Pour the mixture into a lined or greased loaf tin.

  6. Bake for about 50-60 minutes. To test if it’s ready insert a knife into the middle and if it comes out clean then it’s done.

  7. Let the loaf cool on a cooling rack and serve.
