The Ultimate Banana Bread Recipe

What you need:
2 cups of flour (standard OR self raising)
2 tsp baking soda
Pinch of salt
1 tsp cinnamon
½ tsp of all spice (optional)
1 cup coconut oil OR butter OR Olivani spread
1 cup chopped or mashed banana
2 eggs
Cup of sultanas OR Raisins OR other dried fruit
Sliced half banana chopped in two for decoration
Oil OR butter OR baking paper for greasing or lining the loaf tin
Loaf tin
NOTE: With the sultanas, banana and cinnamon this cake loaf doesn’t need sugar. But if you want an extra dose of sweetness you can add half a cup of brown sugar.
What to do:
Preheat the oven to 160-170°C
Combine flour, salt, baking soda, cinnamon and all spice (or your alternatives) in a bowl.
In a separate bowl beat together the oil and eggs. Stir in the chopped or mashed banana and dried fruit.
Gradually mix the dry ingredients into the wet ingredients with a wooden spoon until combined.
Pour the mixture into a lined or greased loaf tin.
Bake for about 50-60 minutes. To test if it’s ready insert a knife into the middle and if it comes out clean then it’s done.
Let the loaf cool on a cooling rack and serve.
