Peter Rabbit’s Carrot Cake Muffins Recipe

Pull up a few fresh carrots from Mr McGregor’s garden and bake these delightfully simple and mouthwateringly scrumptious treats.

Time: 15 min prep and 30 min bake time
Makes: 9-12

REMEMBER: always ask permission from a grown-up before you start cooking


What you need:

Muffin Ingredients 

  • 2 cups (250g) All Purpose Flour

  • 1 full cup (300g) Brown or coconut sugar

  • 1 tsp Baking Powder

  • 1 tsp Baking Soda

  • 1/2 tsp Salt

  • 2 tsp Cinnamon

  • 1 tsp Nutmeg

  • About 5 small to medium carrots with tops on (should be about 1 full cup of grated carrot)

  • 3  Eggs

  • 1 Tbsp Orange Zest


Orange Icing Ingredients

  • 1-2 cups icing sugar

  • 1/2 cup butter or coconut oil

  • 2 tbsp fresh orange juice (from the orange you have zested)


Decoration

  • Washed and scrubbed tops of small carrots

  • Toothpicks or kebab

Hop to it:

  • Preheat the oven to 180C.

  • Combine flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg in a large mixing bowl.

  • Wash the carrots and chop their tops off. Keep the carrot tops to one side for decoration.

  • Peel and grate the carrots and add it all (about 1 whole cup) to the bowl with the grated orange zest.

  • Add the eggs to the bowl and mix until a thick batter forms, then spoon the carrot cake batter into the greased or lined muffin trays.

  • Bake for about 30 minutes and when baked to perfection pop them carefully onto a wire cooling rack.

  • Enjoy the cakes as they are OR whip up some icing and decorate.


How do you know when your muffins are done?

You can use these three tests as a guide to know when cakes are baked:

  • The cake has baked away from the sides a little.

  • The top bounces back when touched.

  • A blunt knife inserted into the centre comes out clean.


Ice and decorate

  1. Combine the icing sugar, coconut oil or butter and orange juice.

  2. Cream together with a fork until the icing has a stiff but smooth consistency.

    If it’s not thick add more icing sugar.

  3. Pipe, dollop or spread your icing onto the cupcakes.

  4. Use the tops of your carrots to decorate the cupcakes. You could also create toppers by cutting out Peter Rabbit pictures from your old Upstart magazines.
