Happily Avo-After Ice Cream Recipe
Create your own SUPER tasty ice cream blocks with natures own superfood - avocados.
We call these Happily Avo-After ice cream because if you mix the ingredients below just right, you may never want to buy another ice cream block again!
REMEMBER: always ask permission from a grown-up before getting to work in the kitchen
What you need:
1 banana
1 avocado
1 cup coconut milk or coconut cream
1 ½ tbsp honey
2 ½ tbsp lime juice
Strawberries
desiccated coconut to decorate (optional)
popsicle moulds OR large iceblock trays
blender or processor
What to do:
Chop, scoop and measure the ingredients and blend them in a blender or food processor.
Taste the mix.
If it’s too sweet, add a little more lime juice.
If it’s too sour, add a little more honey.Clean your Popsicle moulds or large ice cube trays and fill each mould with the mix. Make sure you leave a little room at the top for the final ingredients.
Slice the strawberries. We cut our strawberries into heart shapes to make them look extra special.
Slide the strawberries down the side of the popsicle. If you cut them into a shape, make sure you slide them in upside-down… that way, when your ice cream is done it will be facing the right way.
If you wish, add a drop or two of lime juice to get an extra bit of zest running through your ice block.
Cover the bottom of the ice block with desiccated coconut before popping the ice cream stick in place.
Leave in the freezer overnight.
Remove your Grinch ice creams from the freezer. If you have trouble popping them out of their moulds, run the mould (not the ice cream) under a warm tap.
Dip the popsicles in coconut and/or chocolate or just leave it as it is.
