What you need:

  • Four cups of leftover Weet-Bix crumbs
    (about five whole Weet-Bix crushed)

  • 1 Full cup of dried dates (pitted)

  • ½ Cup desiccated coconut

  • 3 Large tbsp cocoa

  • ½ Cup of sunflower seeds

  • 2 Large tbsp liquid honey

  • Water to soak the dates in

  • 10-20g Dark chocolate crushed or broken for the slice

  • 30-40g Dark chocolate for the topping

What to do:

  1. Put one full cup of dates into a mug, cover them with hot water and let them soak for about ten minutes.

  2. While the dates soak measure out the rest of your ingredients and add them to the blender (except for the chocolate for the topping).

  3. Add your soaked dates along with 2 tbsp of warm date water to the blender.

  4. Blitz all of the ingredients together until it begins to clump or ball.

  5. Spoon the mixture into the lined loaf tin and press it down firmly to create the slice base.

  6. Melt the remaining 30-40g of chocolate and spread it evenly over the top of the slice base.

  7. Cover your slice and put it in the fridge to set for two hours.

  8. Slice and enjoy!

This slice can be stored in the fridge for up to 3-5 days.

Tip: If you crush your chocolate in a pestle and mortar you can tip the two tablespoons of warm date water into the empty mortar bowl before adding it to your mix. A few stirs and it will collect any remnants of chocolate left over.

Add a little something special: You could also add raisins or other little sweet treats into the mixture.

Happy Making!
