Perfect Parfait recipe
Choose your favourite fruit, yoghurt, and granola to create the perfect parfait - for breakfast or dessert.

What you need:
Fresh Bananas and Blueberries
2 cups fresh or frozen blueberries
1/4 tsp lemon juice
1 tsp corn starch or 1 tsp arrowroot
Vanilla Yoghurt
Granola and shredded coconut
Liquid Honey
Optional sugar-free compote (see recipe below)
What to do:
Layer your ingredients in a thin tall glass or jar however you like and enjoy as a breakfast or dessert.
TIP: Pay attention to how much you put into the glass to make sure it’s a healthy portion size for you.
Seasonal Fruit: Visit your local fruit and vegetable market and buy the fruit that is in season. It’s cheaper and even more delicious. We got a small punnet of fresh blueberries for $2.50 and they are about $4.20 at our supermarket!

Always get an adult to help or supervise when using the stove!
Add the frozen blueberries and lemon juice to the pot.
Sprinkle on the corn starch or arrowroot powder.
Stir over a medium heat, crushing about half of the berries with your mixing spoon.
When the mixture begins to thicken, remove from the heat and pour into a jar for storing. It will thicken even more as it cools too.
You can have this compote warm on pancakes, yoghurt or other treats but it’s best served cool in the parfait, so it doesn’t steam up the glass.
